Mushroom & Nut Ground Meat
This recipe is a staple for my weekly prep because it’s simple - can be used in tacos, salads, dips, pasta! Pretty much anything that you’d use ground beef or turkey for.
Unless I’m making my mushroom and nut meat for a specific dish, I only season with salt and pepper. That way, I can pair the meat with different recipes and season according to the dish.
Throughout the week I made tacos with most of the meat. Below, you’ll also see some cauliflower steaks topped off with the “meat'“ and aromatics.
Ingredients:
2 cups of mushrooms
1 cup mixed nuts or all walnuts
2 eggs (optional)
1/2 cup bread crumbs
2 tsp of liquid smoke
1 tsp browning
Directions:
Add the mushrooms, mixed nuts or walnuts, eggs, and bread crumbs in a food processor.
Place a cooking pan over medium heat on the stove. Coat the pan with your favorite cooking oil.
Transfer the meat from the processor to the pan when the cooking pan is ready. Cook for at least 10-15 minutes, mix periodically using a wooden spatula.
Next, add the liquid smoke and browning. Mix well, add more oil if the meat or pan starts to look dry.
Cook until desired texture and salt to taste.
